Kūmara and Basil Soup is simple and easy to make on these cooler nights.
Heat the oil in a pot and add the onion. Fry until soft and add the 1/2 of the kūmara. Fry until slightly golden. Add the tomatoes, basil, turmeric, coconut milk, and stock and stir to combine. Cover and bring to the boil. Reduce and simmer for 10 minutes.
Stir the soup to help the kūmara to break up a little. Add the rest of the kūmara. Continue to simmer until the newly added kūmara is soft. Add the peanut, peanut butter and spinach and stir until mixed. Bring to the boil and serve.
