Jamaican Jerk Chicken

A simple way to use our Premium Eco Pack Jerk Chicken blend for a spicy BBQ chicken with zesty lime. For best results use a charcoal grill, but a gas BBQ will still give delicious results.

 500 g Chicken Pieces
 2 tbsp Mrs Rogers Premium Jamaican Jerk Rub
 2 Limes, juiced
 1 tbsp Olive Oil

Combine Jerk Rub, lime juice & olive oil in a bowl.

Add chicken pieces and coat all over. Cover and refrigerate overnight, turning the chicken in the marinade once or twice.

Preheat your BBQ or charcoal grill until very hot.

Carefully place the chicken pieces on the grill and cook on all sides until you get a nice dark browned colour, reduce heat and cook until juices run clear and chicken is cooked through.

If using bone in pieces, you can finish the chicken in the oven.

Once cooked remove from heat and rest for 5 minutes, squeeze over more lime juice before serving with rice or a fresh salad with diced mango and avocado.

HINTS & TIPS: Perfect for use on pork chops or slow cooked pulled pork; Can simply be sprinkled on an oiled chicken breast and baked in the oven; Wrap wood smoking chips in tin foil and poke holes in it for a disposable smoker for hooded BBQ’s, for that authentic smokey flavour.
