Ginger Leftover Lemon-Skin Syrup

It's time to stop throwing away your lemon skins once you have squeezed the juice. Why? Because you can easily upcycle the skin to make the yummiest Ginger Leftover Lemon-Skin Syrup that keeps in the fridge and can add so much flavour to a lot of dishes.

 4-5 Lemon Skins
 1 cup Sugar
 1 tsp Mrs Rogers Organic Ginger

Combine the skins, sugar and ginger in a bowl and cover. Leave for at least 2 hours if not overnight. The longer you leave it the deeper the flavour and more juice will be drawn out naturally.

Sieve the juice and discard the skins. Keep in a sealed jar in the fridge for up to 3 months.

NOTE: Use in cocktails, over ice cream, drizzled on a warm cake or made into a salad dressing.
