 4 large Flat Mushrooms
 125g Cream Cheese
 1 cup Grated Cheese
 2 Garlic Cloves
 1 cup packed Spinach, sliced
 1/4 cup Pine Nuts
 Lemon or Lime to serve

Preheat oven to 180C. Cut out the core and the top surrounds of the mushroom to make a bowl. Dice those mushroom pieces into very fine pieces. Crush and dice the garlic.

Toast the Pine Nuts until golden. In a bowl, soften the cream cheese if needed. Add the diced mushrooms pieces, garlic, grated cheese, Southern Oceans Fish Rub, spinach and pine nuts and stir to combine.

Fill the mushrooms and bake for 20 minutes. Serve with fresh lemon or lime wedges to be squeezed over top.
