Easy Mexican Quesadilla

Pronounced ‘Kay-suh-dee-yuh’, these are almost like Mexican toasted sandwiches, a crisp shell with a hot centre of spiced mince & cheese. Serve these with Tomato Salsa & sour cream as a snack or with a fresh salad as a light & healthy meal.

 2 tsp Mrs Rogers Oregano
 1 tsp Mrs Rogers Thyme
 2 tsp Mrs Rogers Ground Cumin
 2 tsp Mrs Rogers Paprika
 ½ tsp Mrs Rogers Ground Cinnamon
 1 tsp Mrs Rogers Chilli Flakes
 1 tbsp Olive Oil
 1 Onion, finely diced
 2 Cloves of Garlic, crushed
 500 g Premium Beef or Pork Mince (or use shredded cooked chicken)
 Freshly Ground Mrs Rogers Salt & Pepper to taste
 6 Flour Tortillas
 ¼ cup Fresh Coriander, chopped
 Grated Cheese

In a pan, heat oil & cook onions on medium heat until soft & starting to brown.

Add garlic & cook 2 mins.

Add mince & cook until brown, adding salt & pepper to season.

Mix together spices, stir into mince & cook for 5mins until cooked through. Mince will be dry, add a splash of water & 1 tsp flour to bring it together if you prefer.

To assemble, heat a wide based non-stick frying pan to medium heat, add 1 tortilla, spread half of tortilla with mince, sprinkle with chopped coriander & cheese, fold over tortilla to close. Cook for 2-3mins until crisp & golden, gently flip & cook other side 2-3mins.

Repeat with remaining tortillas & serve.

Hints & Tips: Use as a base and add your own flavours like sweetcorn or grilled capsicum.
