Try these Diwali recipes - quick and easy! The best Masala Chai you have ever tasted, plus Daab Chingri (Prawns with Freshly Grated Coconut).

DAAB CHINGRI
 2 tbsp Mrs Rogers Yellow Mustard Seeds
 4–6 tbsp Vegetable Oil
 1 Onion, thinly diced
 1 tbsp Mrs Rogers Turmeric
 250-300 ml Coconut Milk
 250 g Coconut Meat
 1 tsp Mrs Rogers Himalayan Salt
 1 tsp Mrs Rogers Chilli Flakes (to taste)
 350 g Peeled Raw Prawns
MASALA CHAI
 350 ml Water
 100 ml Milk
 4 Mrs Rogers Black Peppercorns
 10 Mrs Rogers Cardamom Pods, lightly crushed
 Good pinch Mrs Rogers Fennel Seeds
 0.25 piece Mrs Rogers Cinnamon Stick
 1 tsp Mrs Roger Ground Ginger
 1 Black Tea Bag
 Sugar, to taste
DAAB CHINGRI

In a frying pan, add the oil and onions and sauté until translucent and browning.

In a blender or bullet, blend the coconut milk and coconut meat until as smooth as possible.

Using a couple of tablespoons of water, blend the mustard seeds until you get a paste.

Add the mustard seed paste, turmeric and chilli to the onions and simmer for 3 minutes. Add the coconut milk and coconut meat to the mixture and stir until combined. Add the prawns and cook on a medium heat until the prawns are cooked through. Serve with rice.

MASALA CHAI

In a pot, combine the water, milk and spices and heat until just off the boil. This should take around 10 minutes.

Remove and let the tea bag steep for 1 minute. Add sugar to taste and enjoy!
