Crumbed Fish Cakes

These Crumbed Fish Cakes will become a regular family meal in your home. Mrs Rogers Onion Powder gives the flavour of onion without those little bits that the kids complain about!

 500g Potatoes, mashed
 500g Hoki Fish, cooked
 2 tsp Mrs Rogers Onion Powder
 2 tsp Mrs Rogers Dill
 2 tsp Mrs Rogers Sea Salt
 1 Tbsp Lemon Juice
 1 cup Baby Spinach Leaves
 2 Eggs
 1 cup Mrs Rogers Lemon & Cracked Pepper Crusting
 Drizzle of oil to fry

In a bowl, combine the potatoes, fish, onion powder, dill, salt, lemon juice and spinach leaves. Whip the eggs and stir into the mixture.


Heat a drizzle of oil in a frying pan. Make handful-sized patties and sprinkle each side with some of the crumbs. Push the crumbs in gently to make sure they stick. If you love the crunchy texture, use more crumbs.


Fry until golden and warmed through.
