Completely Stuffed Zucchini

 2 Zucchinis
 200 g Chicken Mince
 0.50 Capsicum, diced
 0.50 Corn
 0.25 Onion, diced
 1 tsp Crushed Lemongrass
 0.50 tsp Mrs Rogers Thyme
 0.25 tsp Mrs Rogers Fennel Seeds
 1 tbsp Oil
 Mrs Rogers Sea Salt Medium Grinder
 Mrs Rogers Black Peppercorns Medium Grinder
 0.50 grated Cheese

In a fry pan, heat the oil and gently fry the fennel seeds. Cut the zucchini in half, longways and scoop out the insides using a spoon. Dice the scooped out zucchini.

Add the chicken mince, onion and diced zucchini insides to the fry pan and stir. Add the whole zucchini halves and cook until soft. Once the chicken mince has started to brown, add the thyme, corn and capsicum and stir. Add salt and pepper to taste. Cook for a further 5 minutes to let the flavours infuse.

Fill the zucchini halves with the mix and generously sprinkle the cheese on top. Place the lid on the frying pan until the cheese has melted and serve.
