Cold Cure Chicken Soup

Welcome to our Kitchen - it’s WINTER SOUP time.

 2 tsp Olive Oil
 1 tsp Mrs Rogers Ginger
 ½ tsp Mrs Rogers Coriander Seeds
 ½ tsp Mrs Rogers Chilli Flakes
 2 cloves Garlic, minced
 2 Celery Stalks, thinly sliced
 2 Mushrooms, sliced
 2 tsp Mrs Rogers Turmeric Powder
 4 Chicken Stock
 90 g Soba Noodles
  half of a Cooked Chicken, either store bought or homemade

  Lime Wedges

In a pot that will be bigger enough to hold all the ingredients. add the oil, ginger, coriander seeds and chilli and heat until the spices are fragrant. Add the celery, mushrooms and garlic and stir until just cooked through. Add the turmeric and stir until combined.

Add the chicken stock and simmer for 10 minutes, stirring occasionally. While the soup is cooking, shred the chicken and set to the side. Prepare the soba noodles. For the last 2 minutes of cooking the soup, add the chicken and cook until the chicken is heated through.

In the bowl that you are going to serve the soup in, place the noodles. Ladle the soup over the noodles and place 2 lime wedges on the side. The limes are very nice to squeeze on top of the soup. Serve!
