This recipe was too good not to include in our Christmas month and we’ve put a little kiwi twist on it by adding Kumara and a whole heap of Mrs Rogers flavours.
Grate the potatoes, kumara and onion and leave to drain in a sieve. There’s no need to squeeze all of the fluid out.
In a large bowl put the grated vegetables and add the eggs, parsley, paprika, turmeric, garlic powder and pepper and stir to combine. Add the salt and the flour and mix.
Heat the oil on a medium to high heat, enough to shallow fry. You may need to add more as you fry more. Make spoonful size patties in the oil and move so that an even circle is created. Fry until golden on both sides and drain on paper towels. Continue until the whole batch is made. Serve warm and crispy.
