You will need
 Mrs Rogers Choc Chunk Cookie Baking Mix
 2 eggs
 ¾ cup nuts or dried fruit (optional)

Pre-heat oven to 180 degrees C on fan bake. Line a baking tray with baking paper.

Empty the Choc Chunk Baking Mix into a large mixing bowl. If adding extras, mix them in at this stage.

In a small bowl, whisk the eggs. Add eggs to dry ingredients and mix to form a sticky dough.

Using wet hands, shape into a 30cm (long) x 10cm (wide) x 3cm (high) log on the baking tray.

Bake log for 15-20 mins until hard on the outside and lightly golden. Leave on tray to cool for 15 mins. Do not turn off the oven.

Remove log from tray & cut into 1cm slices with a serrated knife.

Place face up on a baking tray and cool for a further 12-15 mins, turning halfway. Allow to cool on tray.
