Apple and Thyme Tart

This is a perfect way to enjoy apples at this time of year. This Apple and Thyme Tart is a sheer delight on the taste buds and the whole dessert is vegan!

 2 bottles/cans Apple Cider
 3 tsp Mrs Rogers Thyme
 1/2 cup Brown Sugar
 6-8 large Apples, peeled and sliced
Vegan Pastry:
 2 cups Plain Flour
 3/4 tsp Baking Powder
 1/4 tsp Mrs Rogers Fine Pink Himalayan Salt
 1 Tbsp Caster Sugar
 6 Tbsp Coconut Oil
 1 tsp Lemon Juice
 5 Tbsp Almond Milk
To make the pastry:

In a mixer, mix the flour, baking powder, salt and caster sugar until combined. Mix the lemon juice and almond milk together and set aside.

Slowly add the oil and then the lemon and almond milk mixture to the dough while the beaters are still beating. Add small amounts of water until a smooth dough forms. Wrap with cling wrap and set aside until needed.

To make the apples:

In a pot, bring to the boil the apple cider. Add the thyme and sugar and reduce the liquid amount until it’s thick like honey. Set aside.

Heat the oven to 180°C. Grease a round cake tin. Place the apples in a decorative design at the bottom of the tin. Pour the syrup over the apples. Roll out the pastry into a circle just larger than the cake tin and then shape the pastry on top, making sure to push it down around the edge.

Bake for 20-30 minutes. Remove and set aside for 10 minutes. Turn out on to your serving plate by placing the plate on top of the tin and tipping out the tart (you may need to run a knife around the edge beforehand). Serve!
