Why use extract? Natural vanilla extract retains hundreds of flavour compounds, which gives a more complex flavour & aroma than cheaper vanilla “essence”, which only has one flavour compound is often produced from a by-product of the paper pulp industry.
The process involves hand picking and naturally curing the vanilla bean under the tropical sun, using time honoured techniques.
