Tomato Soup

Tomato Soup is ok.... but herb it up and it becomes fab! This Tomato Soup is perfect for a cold winters night... especially a Sunday with a fresh loaf of your favourite bread. This recipe uses several of Mrs Rogers classic herbs and the Mrs Rogers Chilli and Himalayan Salt.

 2 tbsp Olive Oil
 2 Onions, diced
 6 Garlic Cloves, diced
 1 tbsp Mrs Rogers Oregano
 2 Mrs Rogers Bay Leaves
 1 tbsp Mrs Rogers Thyme
 1 tbsp Mrs Rogers Basil
 1 tsp Mrs Rogers Chilli and Himalayan Salt
 1 pinch Sugar, to taste
 2 tins Diced Tomatoes
 1-2 tbsp Tomato Paste
 500 ml Chicken Stock
 150 ml Cream or Milk, to taste

Heat the oil in a pot and add the onions. Fry until they are soft.

Add the garlic, oregano, bay leaves, thyme, basil and chilli and Himalayan salt and stir to release the flavours. Add the sugar.

Add the tomatoes and stir to combine. Add the chicken stock and cover. Remove the bay leaves.

Bring the soup to the boil and reduce the temperature to a simmer. Remove the lid and simmer for 10 minutes.

Puree the soup with a hand blender until smooth. If you want it smooth, push through a sieve to remove any lumps. Return to the heat and bring back to a medium temperature. Add the milk or cream and taste. If you need more seasoning, add.
