Preheat oven to 150C fan-forced. Line a tray with baking paper. Cream the butter and icing sugar together until soft and fluffy.
Add the cornflour, flour, mixed spice and ginger. Mix until combined.
Roll the biscuits into 1 cm thick rounds and press into shape on the lined baking tray. Press a cookie cutter into the top for decoration. Sprinkle the cinnamon sugar on top and gently press to make it stick. Bake for 15-20 minutes until golden. Let cool on oven tray and store in an airtight container.
