Smashed Potatoes

Smashed Potatoes are so much more with Mrs Rogers Garlic and Herb Salt and Parmesan Cheese. A perfect something different to go with any meal.

 4 large Potatoes
 1 tbsp Chicken Stock Powder
 2 tbsp Olive Oil
 2 tbsp finely grated Parmesan Cheese
 1 grinder Mrs Rogers Garlic and Herb Salt

Dice the potatoes and cover with water. Add the chicken stock powder. Boil the potatoes until just soft. Drain the water and place the pot of potatoes back onto the turned off but still hot element. Let the potatoes dry on the element while the oven heats up.

Heat the oven to 200C. On a baking tray, tip out the potatoes and using a potato masher, squash the potatoes until they are just broken and the flesh is more exposed. Pour the oil over the potatoes and cover with a good grind of Mrs Rogers Garlic and Herb Salt on each. Sprinkle the parmesan cheese over the potatoes.

Place in the oven for 30 minutes until golden brown and really crunchy.
