Satay Meatballs

Try this super easy take on Satay Meatballs using sausages.

 6-8 pork flavoured Sausages
 4 packets Two Minute Noodles (or any sort of noodle you like)
 1 head Broccoli (or frozen bag of Stir Fry Vegetables)
 ½ cup Peanut Butter
 ½ cup Milk
 2 tsp Mrs Rogers Curry Powder
 1 tsp Mrs Rogers Sea Salt Fine

Peel the ‘skin’ off the sausages so that you are just left with the sausage meat. Roll into desired size balls. Fry these off in a frying pan until they are cooked through and crispy. If you are using broccoli, cut the florets off and dice up the stem. Cook these with the meatballs covered until they are warmed but still have a crunch. If using the frozen vegetables, do the same.

While the sausages are cooking, in a pot put the peanut butter, milk, curry powder and salt and stir until they are combined and warmed through. This is your peanut satay sauce!

Cook the noodles without the flavour seasoning (put that in your pantry for another time). Portion out the noodles, the meatballs and vegetables. Pour a serving of the satay sauce over everything! Enjoy.

For an alternative look, wrap the sausage meat around skewers and cook the same.
