Pinch and a Punch Fruit Muffins

Pinch and a punch Fruit Muffins! These muffins are really easy to make and you can use any fruit (or chocolate) you like. The orange juice compliments Mrs Rogers Cinnamon and Mrs Rogers Ginger so well, there won't be any left!

 1 Egg
 ¼ cup Rice Bran Oil
 ½ cup Sugar
 1 cup Orange Juice (or Fruit Juice)
 2 cups Plain Flour
 4 tsp Baking Powder
 1 tsp Mrs Rogers Cinnamon
 1 pinch Mrs Rogers Ginger Ground
 1 cup tinned Fruit Salad or whatever fruit you like!
 Icing sugar to dust

Preheat oven to 160C fan forced. Beat egg, oil, sugar and orange juice together in a bowl.

Sift flour, baking powder, cinnamon and ginger into the egg mixture.

Add the fruit and fold into the mixture just enough to combine.

In a greased muffin tray, place 1 large spoonful of the mixture in each section.

Bake in the oven for 15 minutes until golden. Remove and dust with the icing sugar before serving.
