Colourful Cauliflower

It's always fun to find different ways to serve vegetables and this one is certainly interesting! Using several of Mrs Rogers fav herbs and spices, this dish will definitely add some colour to your plate.

 cup Vegetable Oil
 1 large Onion, peeled and cut into small pieces
 1 tsp Mrs Rogers Chilli Flakes
 500 g Frozen Cauliflower Florets
 3 large Potatoes, peeled and cut into even pieces
 400 g canned Diced Tomatoes (or use the floppy ones in your fridge)
 2 tsp Mrs Rogers Ground Ginger
 2 tsp Mrs Rogers Garlic Salt
 1 tsp Mrs Rogers Cumin
 2 tsp Mrs Rogers Turmeric
 2 tsp Mrs Rogers Garam Masala
 3 tbsp Mrs Rogers Sesame Seeds

Heat vegetable oil in a large saucepan. Add the onion, chill flakes, cumin, ginger, garlic salt, turmeric and garam masala and cook until the onions become translucent and slightly golden.

Add the potatoes, tomatoes and 4 tablespoons of water and stir to combine. Cook for 10 minutes until the potatoes are just starting to soften. Add the cauliflower and stir. Cook on a low heat until the potatoes and cauliflower are completely cooked.

While the potatoes and cauliflower are cooking, gently roast the sesame seeds until dark.

To serve, sprinkle with the sesame seeds, tomato slices and fresh coriander.
