 2 Egg Whites
 0.50 cup Caster Sugar
 Red Gel Food Colouring
 Peppermint Essence

Preheat oven to 120C. Line a baking tray with baking paper.

Whip egg whites until fluffed up. Add half the sugar and continue to whip. Once the sugar is dissolved, add the rest of the sugar and whip until all the sugar is dissolved and you have a glossy mixture.

In a piping bag, make 4 lines evenly spaced using the gel food colouring about 5cm long. Fill the bag with the meringue mixture and pipe it in circular motions starting from the outside and work your way to the middle. Alternatively, you can make candy cane shapes!

Cook in the oven for 1 to 1 ½ hours until the meringues are dry. Serve!
