Chilli Chocolate Bacon Fudge

WHAT!!!!! NO..........but yeah. It actually tastes good!!! Chilli Chocolate Bacon Fudge is such an unusual combination that it just works. 

 1 1/2 Dark Chocolate Chips
 1/2 can Condensed Milk
 2 tbsp Butter
 1 tsp Mrs Rogers Himalayan Pink Salt Fine
 2 tsp Mrs Rogers Chilli Flakes
 2 tbsp Brown Sugar
 3 rashes Bacon

Line a baking dish with cling wrap. Trim the bacon fat off – you don’t need to cut all of it off, just the chewy stuff.

In a frying pan, place the bacon down making sure that the whole piece is touching the surface. This will make it extra crispy. In a small bowl, mix the brown sugar and 1 tsp of the chilli flakes. When the bacon is looking brown, turn it over and sprinkle the sugar over the bacon. This will allow the sugar to melt and the chilli to permeate through the bacon. Once cooked, set aside to cool.

While the bacon is cooling, melt the chocolate, condensed milk and butter either in the microwave or pot until it’s combined.

Dice the bacon into pieces. Spread ½ of the chocolate mixture in the lined baking dish. Press firmly out. Sprinkle the bacon pieces over the mixture and push each piece down so that there are no air bubbles. Spread the rest of the chocolate mixture over the bacon and push down firmly. Place in the fridge until completely set. Once cooled, remove and cut into desired size pieces. Store in a container in the fridge.
