Cardamom and Orange Baked Cheesecake

This Cardamom and Orange Baked Cheesecake is perfect for a Sunday High Tea.

 250 g Butter Biscuits
 1 tsp Mrs Rogers Cardamom
 100 g Butter, melted
 500 g Cream Cheese
  cup Caster Sugar
 4 Eggs
 1 tsp Vanilla Essence
 2 Oranges
 2 Mrs Rogers Cardamom Pods
 ½ cup Water
 ¼ cup Sugar

Pre heat oven to 180C. Line a 20cm spring form tin. Crush the biscuits until they resemble fine crumbs. Add the cardamom and melted butter and stir until combined. Press firmly into the bottom of the tin.

In a large bowl, mix the cream cheese and 2/3 cup caster sugar together. Add the eggs one at a time. Finely grate the rind of one of the oranges and add. Juice the orange and add the juice. Add the vanilla essence and stir until all ingredients are combined. Pour mix into tin and bake for 45 minutes or until just firm to the touch.

In a pot, add the water, ¼ cup sugar and cardamom pods. Bring to boil. Remove from heat and slice oranges. Soak the orange slices in the sugar syrup while the cheesecake is cooling. Remove the slices once the cheesecake is cold and place on top for decoration. If you wish to dribble a little of the sugar syrup over the cheesecake to add more cardamom flavour, then do so.

Serve cold.
